 Rainbow Couscous

3 cup of Couscous (Three cups of water)

1/2 cup forzen peas,

1/2 cup frozen corn,

1 Diced Apple (green or yellow)

10-12 Strawberry.

200 gms of diced red Onion

200 Gms of Diced green peppers.

200 Gms of  diced red and yellow Peppers

1 Big diced cucumbers.

1/2 cups of chopped parsley and Basil 

2 tbsp Olive oil

100 gms of raisin, craisins and berry mix.

50 gms of Pinenuts.

450 gms of diced red tomatoes.

2 cloves minced garlic

1/4 cup Balsamic Vinegar

1/8 cup of Lemon juice.

Salt to taste, 1 tsp red pepper flakes.


Boil 3 cups of water Add 1 tbsp of Olive oil. Add the dry couscous and mix it together, Switch the heat off right away. Cover it and let it stand for 10-15 minutes. Once the water disappears, fluff it with a fork.

Now in a other bowl, mix 1 tbsp of Olive oil, Balsamic vinegar, and lemon juice with chopped herbs and minced garlic. Mix in all the fruits and vegetables and let it stand for 10 minutes.

Now mix Couscous and the vegetables together. Rainbow Couscous is ready to serve. Garnish it with Parsley spring and sliced Strawberries.
